Dry Potato Curry
Happy Curry Week All! Today it is Dry Potato Curry a great accompaniment to Lemon Rice.
Ingredients
- Boiled Potatoes 4 medium sized (boil it as soft as jacket potatoes)
- Two tablespoons oil
- Chilli Powder 1 Tsp
- Turmeric – ½ tap
- Salt to taste
- Mustard Seed – 1/2 Tsp
- Urid Dal – 1tsp
- Salt to taste
Method
- Peel and dice the potatoes into ¾ inch cubes.
- Heat a frying pan with one tablespoon of oil. Add the mustard seeds and urad dal and wait until the mustard splits
- Add the potatoes and mix well.
- Add the chilli powder, turmeric and salt according to taste.
- Add another tablespoon of oil and fry the potatoes on low to medium heat for another ten minutes turning around the potatoes with a spatula every two minutes.
- Switch off and serve hot. It is a good accompaniment with lemon rice, coconut rice or roti.
